Red bean paste or “anko”, is a much loved sweet food in Japan. Beans are actually used quite a bit in sweet desserts. Pastries are not an exception to this. In 1874, a Japanese chef (a samurai in his previous career) came up with the idea of the “Anpan” literally “red bean paste bread/roll”. This tasty pastry can still be found today and has been featured everywhere from dining room tables to children’s cartoons.
